- 100grams brown basmati rice
- 140grams edamame, ready shelled, frozen
- 150grams tenderstem broccoli, chopped
- 1tablespoons miso paste
- 2.50centimeters ginger, peeled and grated
- 1tablespoons rice wine vinegar
- 1/2tablespoons maple syrup
- 1tablespoons sesame oil
- 3 cloves garlic, peeled and sliced
- 1 medium red chilli, sliced
- 4 spring onions, sliced
- 100grams kale, destalked and sliced
- 1/2 bunch coriander, fresh, chopped
Description
This light and healthy brown rice salad is delicious with savoury miso and crisp green veggies.
Method
Step 1 of 3
Cook the rice according pack instructions, add the edamame and tenderstem broccoli for the final 3 minutes of cooking and drain. Set aside in a bowl. Whisk the miso, ginger, vinegar, maple syrup and most of the sesame oil together in a small bowl.
Step 2 of 3
Heat a drizzle of sesame oil in a large pan on medium heat and cook the garlic, chilli and spring onions for 1-2 minutes. Stir in the kale and cook for 2 minutes.
Step 3 of 3
Tip the spring onions and kale into the rice mix. Stir in the chopped coriander and pour over the dressing. Leave to cool or serve warm.
