- 1tablespoons extra virgin olive oil
- 300grams Woolworths beef mince
- 1teaspoons Mexican chilli powder
- 400grams no-added salt diced tomatoes
- 1/4 cup jalapeno & chilli mix, coarsely chopped
- 1 1/2 cups white long-grain rice
- 420grams no-added salt Mexican-style 3 bean mix, rinsed, drained
- 1/4 cup sour cream
- 1/4 bunch coriander, leaves picked
Description
Planning a Mexican night? This tasty mince, tomato, bean and rice dish won’t disappoint, with a flavourful chilli mix giving it an authentic kick.
Method
Step 1 of 3
Heat oil in a large saucepan over medium heat. Add mince and chilli powder, then cook for 3 minutes, stirring, or until browned.
Step 2 of 3
Add tomatoes, chilli mix, rice and 1½ cups cold water, then stir to combine. Bring to the boil. Cover with a lid, reduce heat to low and cook for 15 minutes or until rice is tender.
Step 3 of 3
Stir through beans. Divide mixture among bowls, then serve topped with sour cream and coriander.
