  • 2 large bananas, very ripe, peeled
  • 2 large eggs, room temperature
  • 150grams unsalted butter, room temperature, divided
  • 250grams granulated sugar
  • 500grams plain flour
  • 1teaspoons bicarbonate soda
  • 1teaspoons cinnamon
  • 1 small mango, peeled, diced small

Description

Fresh spiced banana cake takes on tropical flavour baked with spiced mango for a light and fruity snack or dessert.

Method

Step 1 of 3

Preheat oven to 190°C. Add the banana and eggs to a container, use a hand blender to puree the ingredients together. Whip 125g butter and sugar together in a separate bowl until smooth and airy, fold in the banana puree until combined.

Step 2 of 3

Sift together the flour, baking soda and cinnamon into a large bowl, add in the butter and banana mixture, fold together using a spatula until all the flour is incorporated, folding the diced mango in at the end.

Step 3 of 3

Use the remaining butter to grease a 23x23x5 cm baking pan. Pour in the batter, leveling it off using a spatula. Bake for 45-60 minutes until a toothpick comes out clean with inserted into the center of the bread. Allow the bread to cool on a rack before slicing.
