  • 200grams spinach, washed and drained
  • 8 stalks asparagus, sliced
  • 1/4 cup milk
  • 20grams butter

  • 1tablespoons chives, chopped
  • 1tablespoons parsley, chopped

A creamed and herbed pie which is rich and full of green vegetables.

Method

Step 1 of 6

Pre-heat the oven to 180°C/160°C fan-forced.

Step 2 of 6

Line a small 6-8 inch cake tin with some butter.

Step 3 of 6

Place the puff pastry at the bottom and the edges, keeping some pastry for the top.

Step 4 of 6

In a bowl, crack the eggs and combine with the ricotta, spinach, parsley, chives, salt, pepper and asparagus.

Step 5 of 6

Empty contents into the cake tin and cover with puff pastry, tighten the edges together. Brush with milk.

Step 6 of 6

Pierce the top of the pastry a few times with the fork and bake in the oven for 35 minutes before serving.
