  • 1 1/4 cup self-raising flour
  • 60grams butter, soft
  • 1/3 cup shredded coconut
  • 2/3 cup lemon curd
  • 1 lemon, sliced (to garnish, see tip)
  • whipped cream (to serve)
  • 1/2 cup coconut milk
  • 2 eggs
  • 1/3 cup caster sugar

Method

Step 1 of 5

Pour enough boiling water into the slow cooker to 2cm deep and turn onto high setting to preheat. Grease 6 x 3/4-cup ramekins and place 1 tbs of the lemon curd into the base of each.

Step 2 of 5

Process flour, coconut, sugar, eggs, butter, milk and remaining lemon curd together in a small food processor until smooth. Divide evenly between the ramekins over the lemon curd.

Step 3 of 5

Gently spoon 2 tbs boiling water over each pudding. Place into the slow cooker.

Step 4 of 5

Cover with a lid. Cook for 1 hour until puddings have risen and are cooked through when tested with a skewer.

Step 5 of 5

Carefully lift ramekins out onto serving plates. Top with cream and lemon slices.
