- 1tablespoons flour
- 1/4teaspoons white pepper
- 1 small cauliflower, cut into florets
- 6 long red chillies, deseeded, finely chopped
- 1 bunch coriander, sprigs removed
- 2 red onions, halved lengthways, thinly sliced
- 400grams can diced tomatoes
- 1teaspoons ground coriander
- 2teaspoons ground cumin
- 1 1/2 cup chicken stock
- 1 pinch pepper (for seasoning)
- 1kilograms pork fillet
- 3tablespoons olive oil (save 1 tbs olive oil)
- 1teaspoons sea salt flakes
- 3 cloves garlic, finely chopped
- 1/4 cup pinenuts, toasted
- 1 pinch pink salt ground (to taste)

Method
Step 1 of 6
Place chilli, garlic, cumin, coriander, salt, pepper and 1 tablespoon oil in a small food processor and process until a smooth paste forms. Set aside.
Step 2 of 6
Tie pork with kitchen twine every 4cm to retain shape. Heat remaining oil in a large frying pan over a medium-high heat. Add pork and cook for 10 minutes, turning until golden on all sides. Transfer meat to slow cooker.

Add onion to frying pan and cook for 5 minutes or until soft. Stir in spice paste, cook for 1 minute or until aromatic. Sprinkle flour over and stir well to combine. Remove pan from heat and slowly add tomato and stock, stirring well. Return to heat and stir until mixture comes to the boil. Pour over pork in cooker. Cook pork on LOW setting for 6-8 hours until very tender.

About 30 minutes before serving, cook cauliflower in boiling water for 5 minutes or until just tender. Drain and cool. Heat oil in a frying pan until hot. Add cauliflower and cook, tossing until golden. Add pine nuts and stir until combined. Cook for 2 minutes. Season.
Step 5 of 6
Place couscous in a bowl. Pour over boiling water. Stir well, cover and set aside for 5 minutes or until water is absorbed. Fluff with a fork. Finely chop half the coriander and stir through couscous.
Step 6 of 6
Transfer pork to a chopping board. Stand for 5 minutes. Slice. Add cauliflower to couscous. Serve pork with couscous, yoghurt and remaining coriander.
