  • 250grams middle bacon rashers, chopped
  • 400grams can diced tomatoes
  • 2tablespoons dijon mustard
  • 2 garlic cloves, crushed

Method

Step 1 of 3

Soak beans in water overnight. Drain and rinse.

Step 2 of 3

Cook bacon, onion and garlic in a frying pan over medium heat, stirring occasionally, for 10 minutes. Transfer to a slow cooker and add beans, vinegar, barbecue sauce, mustard, paprika, chilli, bay leaves and 2 cups of water. Cook on high for 8-10 hours or on low for 12-14 hours.

Step 3 of 3

Once beans are tender, add tomato and cook on low for a further 30 minutes.
