  • 1 small Lebanese cucumber, sliced on an angle
  • 1/4 cup mint, finely chopped
  • 1 small red onion, grated
  • 2 tomatoes, sliced
  • 2teaspoons olive oil
  • 3teaspoons ground cumin
  • 1/3 cup Greek-style yoghurt
  • 500grams lamb mince
  • 100grams mixed salad
  • 4 Turkish rolls, split, toasted
  • 180grams haloumi
  • 1 clove garlic, crushed

Method

Step 1 of 4

Place mince, onion, garlic and cumin in a bowl. Season. Using clean hands, mix until combined. Shape into 4 patties. Cover and set aside.

Step 2 of 4

Stir mint into yoghurt in a bowl and set aside. Slice halloumi and pat dry with paper towel. Drizzle with oil and season with pepper.

Step 3 of 4

Heat a frying pan over medium-high heat. Cook patties in a non-stick frying pan for 4 minutes on each side or until cooked to your liking. Transfer to a plate. Cook halloumi for 1 minute on each side or until golden.

Step 4 of 4

Spread roll bases with a little mint yoghurt. Top with salad leaves, patties, more mint yoghurt, halloumi, tomato, cucumber, more mint yoghurt and roll tops. Serve.
