  • 12 frozen spring roll pastry sheets, thawed
  • 1 avocado, deseeded
  • 5milliliter virgin olive oil spray
  • 1 lime, zested, juiced
  • 1/4 cup Japanese mayonnaise
  • 200grams frozen shelled edamame, thawed (plus extra to serve)
  • 1/4 cup wasabi peas
  • seaweed snack

Method

Step 1 of 4

Preheat oven to 180°C. Line 2 large baking trays with baking paper.

Step 2 of 4

Spray 3 pastry sheets with oil and layer on top of each other, smoothing to remove any air bubbles. Cut into 6 wedges and arrange on tray. Repeat with remaining sheets to make 24 pieces. Spray again with oil. Arrange on trays and bake for 5 minutes or until golden brown and crisp. Cool on trays.

Step 3 of 4

To make the dip, scoop avocado flesh into a blender or food processor. Add edamame, mayonnaise, half the wasabi peas, zest and lime juice. Season and process until smooth.

Step 4 of 4

Transfer dip to a serving bowl and top with seaweed snack. Serve with pastry crackers and extra edamame and remaining wasabi peas.
