Method

Step 1 of 6

Wash 8 oranges well. Using a small, sharp knife, cut oranges about 2cm from the top, reserving tops. Working with one at a time, hold an orange above a bowl to catch juices and scoop out the flesh, ensuring not to cut through the skin. Repeat with remaining 7 oranges.

Step 2 of 6

Strain the flesh and juice, pressing well to remove as much juice as possible. Juice remaining 4 oranges. Measure juice and add enough water to make 2 cups.

Step 3 of 6

Pour 2 cups boiling water into a heatproof jug. Add jelly crystals, stirring well to dissolve. Stir in juice.

Step 4 of 6

Pour jelly mixture into a shallow 6-cup dish. Cover and chill for 3 hours or until set.

Step 5 of 6

Meanwhile, using a small, sharp knife, carefully cut faces in hollowed out oranges.

Step 6 of 6

Mash jelly with a fork, spoon into oranges and replace tops. Serve.
