- 200grams low fat cottage cheese
- 1 cucumber and carrot, cut into rings
- 4 cucumbers and carrots, cut into thin strips, or 200g Pad Thai Rice Noodles, to decorate
- 2tablespoons parsley, chopped
- 1/2 cup sweet chilli sauce (to decorate)
- 16 black olives, sliced
- 250grams can corn kernels, drained
- 4 pita pockets
- 190grams Yellowfin Tuna Springwater, drained

Method
Step 1 of 4
Combine tuna, corn, cheese and parsley in a bowl, and mix.
Step 2 of 4
Heat pita following packet directions, then cut each in half to make 8. Fill with tuna mixture.
Step 3 of 4
Overlap carrot and cucumber strips on top of pitas. If using rice noodles, soak in boiling water until softened. Dry well. Lay over the top of the pocket and trim edges.
Step 4 of 4
Add cucumber, carrot and olives for eyes. Drizzle with sweet chilli sauce.
