  • 2tablespoons olive oil
  • 400grams potatoes, chopped
  • 1 large onion, peeled and chopped
  • 400grams beef meatballs
  • 3 cloves garlic, peeled and minced
  • 1teaspoons oregano
  • 2 1/4-plus 2 tbs cups passata
  • 200grams peas, frozen
  • 60grams parmesan, grated

Description

This simple and quick meatball stew is hearty and filling for an easy midweek dinner with leftovers for lunch.

Method

Step 1 of 3

Boil the potatoes in a pan of boiling water for 8 minutes and drain. Heat the oil in a large, deep pan and cook the onions for 5 minutes. Add the garlic and oregano and cook for 2 minutes.

Step 2 of 3

Add the meatballs to the pan and cook for 5 minutes, until browned. Pour in the passata and cook for 5 minutes.

Step 3 of 3

Tip in the potatoes and peas, cook for 1-2 minutes and serve with parmesan on top.
