- 6tablespoons olive oil
- 2 medium onions, peeled and sliced
- 400grams chicken breast, skinless, diced
- 2 large capsicums, red and green, cored and sliced
- 2 cloves garlic, peeled and minced
- 2tablespoons fajita seasoning
- 100grams sweetcorn, frozen
- 400grams kidney beans, drained
- 400grams chopped tomatoes
- 3tablespoons coriander, fresh, chopped
- 1 medium lime, juiced
Description
This simple Mexican stew is delicious served with rice or tortillas and all the trimmings like guacamole and jalapenos.
Method
Step 1 of 3
Heat the oil in a large casserole dish on medium high heat and cook the onions for 5 minutes. Add the chicken and capsicums and cook for 5 minutes.
Step 2 of 3
Stir in the garlic and fajita seasoning and cook for 1 minute. Add the sweetcorn and kidney beans, pour over the chopped tomatoes and lime juice and simmer for 15-20 minutes until the chicken is cooked through and the sauce has reduced.
Step 3 of 3
Serve with chopped coriander, guacamole and jalapenos on top, if desired.
