- 1 large onion, finely chopped
- 2 carrots
- 225grams chestnut mushrooms, thinly sliced
- 2 garlic cloves, finely chopped
- 3tablespoons dried ground New Mexico chilli powder
- 1teaspoons ground cumin
- 1teaspoons sea salt
- 2teaspoons dried oregano
- 3 3/4 cup vegetable stock
- 425grams hominy, or sweet corn, rinsed and drained
- 1 courgette, trimmed, quartered lengthways, and cut into 1cm chunks
- 1 small lime
- 2tablespoons coriander leaves, finely chopped

Method
Step 1 of 7
Heat the olive oil in a large, deep-sided pan or stockpot over a medium–highheat. Add the onion and cook, stirring frequently and adjusting the heat as necessary, for 5 minutes.

Stir in the carrots and mushrooms, and cook for 5 minutes.
Step 3 of 7
Add the garlic and stir for 1 minute.
Step 4 of 7
Sprinkle the chilli powder, cumin, salt, and oregano over the vegetable mixture and stir for 30 seconds.
Step 5 of 7
Add the vegetable stock, bring to a simmer, and cook for 5 minutes.
Step 6 of 7
Add the hominy or sweetcorn and courgette, bring to the boil, reduce the heatto medium–low, and cook for 10 minutes.
Step 7 of 7
Remove from the heat, stir in the lime juice and coriander and serve.
