- 1tablespoons olive oil
- 1 pinch salt
- 1 onion, finely chopped
- 2 cloves garlic, grated or finely chopped
- 1/2-1teaspoons cayenne pepper
- 400grams adzuki beans, drained and rinsed
- 400grams whole plum tomatoes, chopped
- 2 cup vegetable stock, hot
- 12 black olives, pitted

Method
Step 1 of 3
Heat the olive oil in a pan over a low heat. Add the onion and a pinch of salt, and sweat gently for about 5 minutes until soft and translucent. Add the garlic and cayenne, and stir through.
Step 2 of 3
Tip in the aduki beans and tomatoes, including any juices, and pour over the stock. Bring to the boil, then reduce the heat to low.
Step 3 of 3
Simmer gently for 15-20 minutes, stirring through the olives for the last 5 minutes of cooking. If the stew dries out too much, top up with a little hot water. Serve with a crisp salad, new potatoes, or rice.
