Biscuit base
  • 500grams plain chocolate biscuits
  • 250grams butter, melted
Caramel filling
  • 300milliliter thickened cream, whipped
  • 5 bananas
  • 1/4 cup cream
  • 1/4 cup golden syrup
  • 1teaspoons cocoa
  • 1/2 cup brown sugar, firmly packed
  • 790grams sweetened condensed milk
  • 120grams butter

Method

Step 1 of 4

Process biscuits in a food processor until fine crumbs form. Transfer to a bowl and stir in the butter. Press biscuit mixture over base and sides of a deep 25.5 cm fluted tin with removable base. Freeze while you prepare filling.

Step 2 of 4

To make caramel filling, combine condensed milk, butter, sugar, cream and syrup in a medium heavy-based saucepan. Stir over medium heat for about 20 minutes or until mixture is a rich caramel colour. Cool for 10 minutes.

Step 3 of 4

Pour caramel filling into biscuit base. Freeze for 4 hours or chill overnight until firm (see tip).

Step 4 of 4

To serve, peel bananas and halve lengthways. Arrange on top of caramel, cut-side up. Spoon whipped cream over and dust with cocoa.
