  • 1 Woolworths indulgent apple & cinnamon hot cross bun, roughly chopped
  • 1/3 cup parmesan, finely grated
  • 2tablespoons plain flour
  • 1 free range egg, lightly beaten
  • 400grams pork sizzle steaks
  • 5milliliter vegetable oil, for shallow frying
  • 2 small fennel bulbs, trimmed, thinly sliced
  • 1 small red apple, thinly sliced into rounds
  • 1/2 bunch continental parsley, leaves picked, roughly chopped
  • 2tablespoons balsamic dressing

Description

Whip up a satisfying crispy schnitzel crumb using a leftover apple and cinnamon hot cross bun, parmesan and flour. The creative coating adds a perfect touch of flavour.

Method

Step 1 of 4

Place hot cross bun in a food processor and process until fine crumbs form. Add parmesan and process until mixture is just combined. Transfer to a large plate. Place flour on a separate plate and place egg in a shallow bowl.

Step 2 of 4

Working with one steak at a time, coat steak in flour, then dip in egg, and then coat in crumb mixture. Place on a baking tray.

Step 3 of 4

Place oil in a large frying pan until 5mm up side of pan. Heat over medium-high heat. Cook schnitzels, in batches, for 2 minutes on each side or until golden and cooked through. Transfer to a paper towel-lined plate.

Step 4 of 4

Meanwhile, place fennel, apple, parsley and dressing in a large bowl. Toss gently to combine. Divide salad among plates. Top salad with schnitzel, season and serve.
