  • 1tablespoons caster sugar

  • 9 large strawberries, 4 thinly sliced, 5 to serve

Description

Enjoy the spice-filled flavour of hot cross buns with this hot cross bun pancake recipe. This impressive brekkie is made even easier thanks to a pancake shaker.

Method

Step 1 of 3

Prepare pancake mixture according to packet instructions, adding mixed spice to the shaker. Heat a large frying pan over medium heat and grease with a little butter. Add ¼ cup batter to pan. Repeat to make another pancake. Scatter each with some of the blueberries and sultanas, then cook for 2 minutes on each side or until golden and cooked through. Repeat with remaining butter, batter, blueberries and sultanas.

Step 2 of 3

Place sugar and cream cheese in a small bowl and stir to combine. Place 1/4 cup cream cheese mixture into a piping bag or a snaplock bag with 1 corner snipped off.

Step 3 of 3

Spread a little of the remaining cream cheese mixture over half of the pancakes, top with strawberries and remaining pancakes. Pipe cream cheese crosses over pancakes and serve with extra strawberries.
