  • 1 carrot, halved lengthways, thinly sliced diagonally
  • 1L salt-reduced chicken stock
  • 1 long red chilli, thinly sliced
  • 1 bunch choy sum, trimmed, roughly chopped
  • 1 1/2tablespoons Woolworths white wine vinegar
  • 1/4 bunch coriander, leaves picked

Description

This flavour-packed Japanese-inspired ramen has everything in one bowl – mince, noodles, veg and a warm chicken broth.

Method

Step 1 of 3

Heat oil in a large saucepan over medium-high heat. Cook mince for 5 minutes, breaking up lumps with a wooden spoon, or until lightly browned and cooked through. Add both of the flavour sachets from noodle packets. Cook for 1 minute, stirring, or until fragrant.

Step 2 of 3

Add carrot, stock, 1 cup cold water, noodles and half of the chilli, then bring to the boil over high heat. Reduce heat to medium and simmer, uncovered, for 2 minutes to allow flavours to infuse. Add choy sum, then simmer for 2 minutes or until tender. Stir in vinegar.

Step 3 of 3

Divide soup among bowls. Serve topped with coriander and remaining chilli.
