  • 300grams Mr Chen’s dried thin egg noodles
  • 2 free range eggs
  • 1tablespoons sesame oil
  • 3centimeters ginger, finely grated
  • 2tablespoons red miso paste
  • 500milliliter salt-reduced chicken stock
  • 1/4 cup Mr Chen’s soy sauce
  • 300grams Mr Chen’s pork & chive dumplings
  • 1tablespoons sesame seeds, toasted
  • 2 nori sheets, halved, cut into 8 strips
  • 2 spring onions, very thinly sliced
  • 1 long red chilli, thinly sliced

Description

In the mood for ramen? These flavoursome pork and chive dumplings, paired with egg noodles in a tasty miso broth, are ready in a flash.

Variation:
Make a prawn version of this dish by replacing pork and chive dumplings with Mr Chen’s prawn hargow.

Method

Step 1 of 4

Cook noodles according to packet instructions. Drain and divide among serving bowls.

Step 2 of 4

Meanwhile, cook eggs in a small saucepan of simmering water for 6 minutes. Run under cold water. Peel, halve and set aside.

Step 3 of 4

Heat oil in a large, deep pot over medium heat. Add ginger and cook for 2 minutes, stirring occasionally, or until fragrant. Add miso, stock, soy and 2 cups water, then bring to a simmer. Add dumplings and cook for 8 minutes or until cooked.

Step 4 of 4

Divide dumplings and broth among bowls. Top with egg, sesame seeds, nori, onion and chilli. Serve.
