- 150grams butter, softened (save 125 g butter softened for buttercream)
- 1/2 cup caster sugar
- 1teaspoons vanilla extract
- 1 egg
- 2 cup plain flour
- 1/3 cup self-raising flour
- 1tablespoons honey
- 1teaspoons ground cinnamon
- 1/2teaspoons mixed spice
- 1/2teaspoons nutmeg
- 2tablespoons icing sugar, sifter (to dust, plus 1 1/2 cups pure icing sugar)
- 1/2 cup brown sugar (for buttercream)

Step 1 of 7
Preheat oven to 180°C. Line two large baking trays with baking paper.

Beat butter, sugar and vanilla in a bowl until pale and creamy.

Beat in egg and honey

Sift flours and spices together.
Step 5 of 7
Add to the butter mixture and stir until combined.

Halve dough. Roll out one portion between two sheets of baking paper until 5mm thick. Cut out 15 biscuits using a heart-shaped cutter. Place onto prepared trays. Bake for 15 minutes or until firm. Cool on trays. Repeat with remaining dough.

Meanwhile, make the buttercream. Beat butter until very pale. Combine both sugars. Add to butter, 2 tbs at a time, beating after each addition until combined. Spoon into a piping bag fitted with a 2cm star nozzle. Pipe onto half the biscuits. Top with remaining biscuits. Dust with icing sugar.
