  • 1 cup plain flour
  • 3/4 cup cornflour
  • 75grams butter
  • 250grams unsalted butter, softened
  • 1 1/2teaspoons vanilla extract

  • 1/3 cup almond meal
  • 8 eggs, separated
  • 3/4 cup caster sugar
  • 110grams natural almonds sliced, toasted
  • 1tablespoons dark rum

Description

Delight in our delicious baumkuchen recipe. A traditional German cake contains decadent dark chocolate and much more. It's the perfect treat. Try it today.

Method

Step 1 of 7

Grease a 20cm springform pan and line base with baking paper. Separate eggs, placing whites into a large mixing bowl. In another bowl, sift flours and almond meal together. Sieve jam and combine with rum and 1 tbs warm water.

Step 2 of 7

Beat butter, caster sugar and vanilla extract together with electric beaters until pale and creamy. Add egg yolks, two at a time, until well combined. Stir in flour mixture.

Using clean beaters, beat egg whites until stiff peaks. Gently fold into the batter.

Step 4 of 7

Heat grill to high (220°C) and place oven rack towards top of the oven but with enough space so the cake pan will easily fit underneath.

Spread 1/4 cup of batter over the base of the pan. Grill for about 2 minutes or until golden. Brush with jam, then repeat with another 1/4 cup of batter. Continue to add and cook layers, brushing each layer with jam. Cool.

To make chocolate glaze, melt 150g dark chocolate and 75g butter together in a small saucepan. Add 2 tbs dark rum and 2 tsp vanilla extract, stirring until smooth and glossy. Remove from heat and cool for 5 minutes.

Step 7 of 7

Remove cake from pan. Spread top and sides of cake with any remaining jam. Pour glaze over top of cake and spread evenly so that it flows over the sides to coat. Press almonds over the sides and edge of cake. Allow to cool slightly then, using the tip of a small spatula, swirl the chocolate glaze. Chill until set. Slice and serve.
