  • 250grams pork & veal mince
  • 210grams woolies red kidney beans, drained (half a tin)
  • 1/4 large cabbage, sliced
  • 1 carrot, sliced on an angle
  • 1 stalk celery, sliced on an angle
  • 1/4 red capsicum, sliced
  • 10 round beans, cut into 1" lengths
  • 10 snow peas, cut at an angle
  • 1/2 brown onion, sliced
  • 4 cloves fresh garlic, finely chopped
  • 1/4teaspoons garam masala
  • 1/4teaspoons turmeric
  • 3tablespoons soy sauce
  • 1/4teaspoons cracked black pepper
  • 4tablespoons olive oil
  • 3-4tablespoons water (for steaming)

Description

This is a great tasty meal to get your veggies into your diet with not alot of meat. Any type of mince goes well with it.

Method

Step 1 of 10

Gather all your ingredients and wash all vegetables. Firstly slice the cabbage and place in a bowl.

Step 2 of 10

Prepare your carrot, celery, capsicum, beans and snow peas and set aside.

Step 3 of 10

Slice onion and chop garlic finely and set aside.

Step 4 of 10

Put 1/2 tin of drained and washed red kidney beans in a dish.

Step 5 of 10

Heat 3 tbs olive oil in wok and cook mince on high heat for a few minutes until nearly cooked.

Step 6 of 10

Sprinkle in the garam masala, tumeric and cracked black pepper and continue to stir with mince for another minute until cooked. Turn down heat to low and remove meat from wok and set aside on a plate.

Step 7 of 10

Add 1 tbs olive oil to wok and cook onion on high heat for a couple of minutes until translucent. Turn down heat. Place onion on top of meat. Then add garlic to wok and cook on LOW heat for a couple of minutes. If you need to add a little more olive oil that's fine. Remove garlic and place on meat. (Sorry didn't get a pic of that!)

Step 8 of 10

Turn up heat and place all veggies except cabbage & red kidney beans in wok and stir until remaining oil is coated over veggies. Then add approx 2 tbs water to create steam and place lid on wok with vent closed. Steam for about 3 minutes (more if you like your veggies cooked more).

Step 9 of 10

Remove lid and place cabbage on top of veggies. Add a little more water if necessary and put lid back on and steam a further 3 minutes.

Step 10 of 10

Remove lid and add red kidney beans, mince, onion, garlic and soy sauce to mixture. Toss together until well combined and heated until very hot. Serve with Singapore Noodles or rice.
