Description

When it’s cold outside, warm up with this hearty soup recipe made with oxtails, beef stock and plenty of veg.

Method

Step 1 of 5

Fry oxtails in a large saucepan over medium heat until browned on all sides and fat comes out. Stir in crushed garlic and diced onion. Discard the fat only.

Step 2 of 5

Add water to the saucepan. Bring to a boil, skimming off any frothy foam that comes to the top.

Step 3 of 5

Add chopped daikon and carrots, peas, beef stocks, diced tomatoes and bay leaves.

Step 4 of 5

Bring to boil, cover, reduce heat to low and simmer for 1 hour or until oxtails are tender.

Step 5 of 5

Remove bay leaves. Serve.
