  • 1 cup dried red lentils, rinsed
  • 1tablespoons mild curry powder
  • 1 large brown onion, finely chopped
  • 680grams thin sausages
  • 80grams baby spinach leaves
  • 4 bread rolls (to serve)
  • 1tablespoons olive oil

Method

Step 1 of 2

Heat oil in a large, deep saucepan over medium heat. Add sausages and cook, turning, for 8 minutes or until golden and cooked through. Transfer to a plate. Add onion and curry powder to pan and cook, stirring, for 3 minutes or until onion is soft. Add lentils, pasta sauce and 6 cups water and bring to the boil. Reduce heat and simmer, stirring occasionally, for 20 minutes or until lentils are soft.

Slice sausages. Return to pan and cook for 2 minutes or until heated through. Add spinach and cook for 1 minute or until just wilted. Serve soup with bread rolls.
