Beef Barley and Vegetable Soup

- 400grams cubed beef - about 3 cm in size
- 1 large onion, finely chopped
- 3 cloves garlic, smashed and finely chopped
- 2 medium carrots, small cubes
- 1tablespoons worcestershire sauce
- 2tablespoons parsley, chopped - can use dried
- 350grams potato, small cubes
- 150grams pearl barley, rinsed well
- 2teaspoons olive oil
- 1/2teaspoons cinnamon
- 5 1/2 cup beef stock
- 2 1/2 cup water
- 1 pinch salt (to taste)
- pepper (to taste)

Description
A lovely warming, nutritious soup for the cooler months, using the wholesome grain, pearl barley.
Method
Step 1 of 8
Gather all ingredients together.
Step 2 of 8
Into a large non stick Pot on high heat, add one teaspoon of Olive Oil, add half of the Beef, brown on all sides quickly for about 3 minutes, remove to a plate and repeat with last of the Beef.
Step 3 of 8
Reduce heat to medium, add the last teaspoon of Olive Oil, add Onion, Garlic and Carrots. Cook stirring constantly for about 4 minutes or until veggies have softened slightly.

Add Cinnamon, and cook stirring for about a minute or until fragrant.
Step 5 of 8
Add Stock, Water and Worcestershire Sauce, bring to boil, reduce heat to simmer, return Beef back into the Pot, along with any juices. Lid on, simmer for 45 minutes or until Beef is just tender.
Step 6 of 8
Add Pearl Barley and Potatoes, return to simmer, cook uncovered for 40 minutes or until Barley is cooked and tender.
Step 7 of 8
Check Seasoning, add Parsley and one last stir.
Step 8 of 8
Serve into bowls and top with additional Parsley if desired...Enjoy.
