  • 3 slices large wholemeal Lebanese bread
  • 400grams lean beef mince
  • 1 1/4teaspoons Woolworths ground sumac
  • 1 cup Woolworths light tasty shredded cheese
  • 2 tomatoes
  • 2 radishes, thinly sliced
  • 2 Lebanese cucumbers, cut into 1cm pieces
  • 1/4 bunch continental parsley, coarsely chopped
  • 1/4 lemon juiced
  • 1tablespoons extra virgin olive oil

Description

Perfectly crispy Lebanese bread chips are topped with sumac-seasoned mince and vibrant salad for a Healthier Middle Eastern twist on a Mexican favourite. This tasty nachos makes a stress-free weeknight meal.

Cooking tip:
If you don’t have an air fryer, bake chips in a 180°C oven until crisp, then arrange the layers in a large baking dish and cook in the oven for 20 minutes.

Method

Step 1 of 4

Preheat a 5.75L air fryer to 200°C. Stack bread slices on top of each other. Using kitchen scissors, cut bread into triangles about 7cm across at the widest point. Cook in the air fryer, in two batches, for 2 minutes. Set aside to cool slightly.

Step 2 of 4

Place mince and 1 tsp sumac in a bowl. Season. Mix until well combined. Break into 2-3cm pieces.

Step 3 of 4

Line the air-fryer basket with baking paper, allowing the paper to come up to the top of the sides of the basket. Arrange one-third of the bread pieces over the base. Sprinkle with one-third of the mince and cheese. Repeat to make 2 more layers. Bake for 10 minutes or until golden.

Step 4 of 4

Meanwhile, combine tomato, radish, cucumber and parsley in a large bowl. Combine lemon juice and oil in a small bowl. Add to salad. Season and toss to combine. Using the overhanging paper, lift nachos out of basket. Transfer to a serving plate or board. Top with half of the tomato mixture. Sprinkle with remaining sumac. Serve with the remaining tomato mixture on the side.
