- 1 medium lemon, zest and juice

Description
This simple and easy harissa pumpkin tray bake makes an impressive vegetarian main course with crispy kale and creamy halloumi.
Method
Step 1 of 3
Pre-heat the oven to 200°C. Add the pumpkin, garlic cloves and red onions to a roasting tin, drizzle over the oil and harissa and toss well to coat. Roast for 20 minutes.
Step 2 of 3
Add the kale and halloumi and toss well. Roast for 15-20 minutes until the kale is crisp and halloumi is golden.
Step 3 of 3
Squeeze out the garlic cloves from their skin and whisk together in a bowl with the lemon juice and zest. Pour over the tray traybake, toss well and serve.
