Ready in 2 steps, this super-easy zucchini slice is the perfect veg-packed dinner. It's transports easily, making it a great next-day lunch choice.
Method
Step 1 of 2
Preheat oven to 160°C/180°C fan-forced. Lightly grease a 26cm (5cm deep) round ceramic pie dish. Lightly beat eggs in a large bowl. Add oil and stir to combine. Add zucchini, carrot, potato, onion, bacon and flour, then stir well to combine. Season with pepper.
Step 2 of 2
Pour mixture into dish. Bake for 50 minutes or until golden and set. Cool in dish for 5 minutes. Slice and serve.
