- 1 large sweet potato, peeled, cut into 2cm cubes (approx. 750g)
- 5milliliter olive oil spray
- 1tablespoons white chia seeds
- 2teaspoons olive oil
- 1/2 cup almond meal
- 1 cup gluten-free plain flour

Method
Step 1 of 2
Preheat oven to 200°C. Line a baking tray with baking paper. Spread sweet potato onto prepared tray and spray with olive oil. Season. Bake for 20 minutes or until soft. Transfer to a bowl and mash. Reline baking tray with baking paper and increase oven temperature to 240°C.
Step 2 of 2
Combine chia and 2 tbs cold water in a bowl. Set aside for 10 minutes to thicken. Add to mashed sweet potato with flour and almond meal. Stir until a soft dough forms. Knead gently until smooth. Using your hands, press mixture out to a 26cm circle on prepared tray. Brush with oil. Bake for 25 minutes or until edges are crisp.
