- 1 small whole red cabbage
- 1teaspoons dried mint
- 1teaspoons smoked paprika
- 1 lemon, zested
- 2tablespoons gluten-free dukkah
- 3/4 cup olive oil (save 1/2 cup to serve)
- 1 clove garlic, crushed
- 1tablespoons brown sugar
Method
Step 1 of 2
Preheat oven to 200°C. Line a large baking tray with baking paper. Slice cabbage into 2cm-thick slices from top to base. Arrange on tray.
Step 2 of 2
Combine oil, sugar, garlic, paprika, mint and zest. Brush liberally on both sides of cabbage slices. Bake for 20 minutes, then turn slices and bake for a further 20 minutes or until tender and crisp. Transfer to a platter, sprinkle with dukkah and a little extra oil.
