- 1/4 cup currants
- 1 small broccoli, cut into florets
- 1/2 cauliflower, cut into florets
- 1/2 small red onion, chopped
- 1/2 cup flat-leaf parsley, roughly chopped
- 100grams almonds, dry-roasted
- 1 pinch pepper (for seasoning)
- 1 cup pearled barley
- 1/4 cup extra-virgin olive oil
- 1/4 cup lemon juice
- 1 pinch sea salt ground (to taste)

Method
Step 1 of 3
Cook barley following packet directions. When tender, add currants. Stand for 5 minutes to soften. Drain and cool.
Step 2 of 3
Steam broccoli and cauliflower for 6 minutes until just tender. Refresh in cold water and drain well.
Step 3 of 3
Combine barley, currants, almonds, parsley and onion in a serving bowl. Whisk oil and lemon juice together and season. Stir through barley mixture. Add broccoli and cauliflower. Toss well. Serve.
