Spiced Cauliflower Couscous

- 1 cauliflower, cut into florets
- 1/3 bunch mint, leaves picked
- 3 spring onions, chopped
- 2teaspoons ground coriander
- 2teaspoons ground turmeric
- 1 lemon, juiced and zest finely grated
- 2tablespoons olive oil
- 1 clove garlic, crushed
- 1/2 cup natural almonds, chopped
Method
Step 1 of 3
Place cauliflower florets into a food processor, pulse in short bursts until finely chopped. Set aside.
Step 2 of 3
Heat oil in a nonstick frying pan over medium heat. Add spring onion, garlic and spices and cook for 1 minute, stirring, until fragrant. Add chopped cauliflower and cook for 3 minutes, stirring, until just tender. Season to taste.
Step 3 of 3
Remove from heat and transfer to a bowl. Cool for 10 minutes. Stir through lemon zest and juice. Top with almonds and mint.
