- 1tablespoons extra virgin olive oil
- 2tablespoons maple syrup
- 2/3 cup rolled oats
- 2/3 cup pecans
- 1 cup flaked almonds
- 250grams sweet potato, peeled, chopped
- 2 apples, peeled, cored, chopped
- 1tablespoons ground cinnamon
- 1teaspoons vanilla extract
- 1 lemon, zested

Step 1 of 3
Preheat oven to 200°C/180°C.
Step 2 of 3
Place sweet potato, apple, cinnamon, zest, juice and vanilla in a medium heatproof bowl. Cover and microwave on high for 8 minutes. Allow to cool slightly then roughly mash.
Step 3 of 3
In a separate medium bowl, add pecans, almonds, maple syrup, olive oil and oats and mix to combine. Add sweet potato mixture to the base of an ovenproof baking dish, then top with crumble mixture. Bake for 20 minutes or until topping is golden brown.
