- 1tablespoons sesame oil
- 200grams mixed mushrooms, cleaned, sliced
- 1teaspoons ginger, peeled, minced
- 2tablespoons soy sauce
- 4 cups water
- 2tablespoons white miso paste
- 1tablespoons dashi powder
- 300grams firm tofu, cut into bite-sized pieces
- 270grams soba noodles, cooked as per packaged instructions
- 2 stalks scallions, thinly sliced
Description
Craving a healthy and filling homemade soup? Aromatic ginger, mushroom and noodle soup is the perfect, quick and easy choice.
Method
Step 1 of 2
Set a pot with the sesame oil onto medium-high heat for 1 minute. Add the mushrooms and ginger to the pot sauteing for 2 minute. Whisk in the soy sauce, water, miso paste and dashi powder bring the soup up to a simmer for 10 minutes.
Step 2 of 2
Add the tofu, soba noodles and scallions to the pot to heat for 1 minute before pouring into bowls.
