- 600grams napa cabbage kimchi, finely chopped, include juice
- 600grams pork shoulder, cut into small cubes
- 4tablespoons gochujang
- 2teaspoons sugar
- 2.20L water
- 400grams firm tofu, cut into cubes
- 2tablespoons soy sauce
- 4 green onions, finely chopped
Description
Korean soups like this kimchi and tofu soups use old, well fermented kimchi. It gives a deeper more tangy flavour to the dish.
Method
Step 1 of 3
In a heavy bottomed pot, combine the kimchi, pork shoulder, gochujang and sugar. Tip in the water and bring to boil over high heat. Cook for 30 minutes.
Step 2 of 3
Lower the heat and add the tofu. Cook for another 10 minutes.
Step 3 of 3
Season with soy sauce and take off heat. Top with green onions and serve.
