  • 3packets dark chocolate, coarsely chopped
  • 8 jumbo white marshmallows, halved
  • 200grams leftover dark fruitcake, cut into small pieces
  • 8 dried figs, chopped
  • 80grams unsalted pistachio kernels, toasted, chopped
  • 2/3 cup moist shredded coconut

Description

Your family won't be able to get enough of this decadent rocky road recipe with leftover Christmas fruitcake, dark chocolate, dried figs and marshmallows.

Method

Step 1 of 5

Grease and line a 22cm (base measurement) square cake pan, allowing paper to overhang sides for handles.

Step 2 of 5

Place chocolate in a large microwave-safe bowl. Microwave on high, stirring occasionally, for 3 minutes or until melted and smooth. Reserve 1/4 cup.

Step 3 of 5

Add 3/4 of the marshmallows, fruitcake, figs, half of the pistachio and half of the coconut to the melted chocolate. Carefully mix to combine.

Step 4 of 5

Spoon chocolate mixture into prepared pan and spread to cover base. Press remaining marshmallow into the chocolate, then sprinkle with remaining pistachio and coconut. Drizzle with reserved melted chocolate.

Step 5 of 5

Chill for 2 hours or until set. Cut into squares to serve.
