- 1/2 cauliflower, florets
- 1 small broccoli, florets
- 1 carrot, diced
- 1 cob corn, cut in half
- 2tablespoons mayonnaise
- 1/2tablespoons honey
- 2 pieces lemon squeezed
- 1/2teaspoons mustard
- 1 pinch salt
- 1 pinch pepper
- 2 pkts small sultana & apricot (about 1 handful)
Description
A simple mixed summer salad to pair with any BBQ meat or fish or chicken main meal.
Method
Step 1 of 5
Steam the cauliflower, broccoli, carrots and corn in microwave steaming bowl for 5 minute (do not over-steam because we still need the veggies fresh & crunchy).
Step 2 of 5
Once cooled down, shear the corn from the cob.
Step 3 of 5
To make the dressing, put the mayonnaise, honey, lemon juice, mustard, sprinkles of salt & pepper into a large mixing bowl and stir well.
Step 4 of 5
Mix the steamed veggies with the sauce in the mixing bowl.
Step 5 of 5
Finally, top with sultanas & apricot and let chill in the fridge for 15 minute before serving with a main dish.
