- 2tablespoons extra virgin olive oil
- 450grams sesame falafel balls
- 120grams Woolworths baby spinach leaves
- 2 cups roasted chopped pumpkin
- 1/3 cup Woolworths coleslaw dressing
- 1/2 cup mixed unsalted nuts
Description
This wallet-friendly falafel and pumpkin salad is so easy to make and packed with flavour.
Method
Step 1 of 2
Heat oil in a large non-stick frying pan over medium-high heat. Cook falafel, in batches, for 4-5 minutes, turning, or until golden-brown and hot. Roughly tear falafel in half.
Step 2 of 2
Combine spinach, pumpkin and falafel in a large bowl. Divide among serving bowls. Drizzle with dressing. Serve topped with nuts.
