  • 1 1/2tablespoons vegetable oil
  • 6tablespoons free range eggs, lightly beaten
  • 2 Chinese sausages, thinly sliced (see tip)
  • 400grams medium green prawns, peeled, deveined, tails intact
  • 2 cloves garlic, crushed
  • 1 long red chilli, thinly sliced diagonally
  • 450grams microwave white long-grain rice
  • 1tablespoons salt-reduced soy sauce
  • 2tablespoons oyster sauce
  • 1 cup frozen peas
  • 3 spring onions, thinly sliced diagonally

Description

Try this easy egg fried rice recipe that uses Chinese sausage and juicy prawns. You can have it ready for lunch or dinner in 20 minutes.

Method

Step 1 of 3

Heat a wok or large frying pan over medium-high heat. Add half the oil, swirling to coat. Add egg and cook, breaking up egg into large chunks, for 2 minutes or until browned lightly. Transfer to heatproof bowl and set aside.

Step 2 of 3

Heat remaining oil in same pan over high heat. Add sausage and prawns, then stir-fry for 2 minutes or until sausage has browned and prawns are almost cooked through. Add garlic and half of the chilli, then stir-fry for 1 minute or until fragrant.

Step 3 of 3

Add rice, sauces, peas and two-thirds of the onion, reserving green part of onion, then stir-fry for 2 minutes or until heated through. Stir in egg and serve topped with remaining onion and chilli. Tip: Replace dried Chinese sausages (or lup chong), available in the Asian section, with 150g chopped rindless middle bacon rashers.
