Description
Bring Italian flavours to your dinner table with this speedy tomato and chicken farfalle pasta dish.
Method
Step 1 of 4
Bring a large saucepan of water to the boil over high heat. Add stock pots and stir to combine. Add pasta and cook for 12 minutes or until al dente. Drain, reserving ¾ cup cooking liquid.
Step 2 of 4
Meanwhile, heat oil in a large non-stick frying pan over medium-high heat. Add chicken and cook, turning occasionally, for 5 minutes or until cooked through and golden brown. Transfer to a large bowl.
Step 3 of 4
Add tomato to pan and cook, stirring occasionally, for 3 minutes or until browned and beginning to blister.
Step 4 of 4
Return chicken to pan. Add pasta and reserved cooking liquid and cook, tossing for 5 minutes or until heated through. Remove from heat. Season with freshly ground black pepper. Top with basil leaves to serve.
