  • 420grams corn kernels, rinsed, drained
  • 4 flour wraps, heated
  • 1 Hass avocado, sliced
  • 1/2 bunch coriander, leaves picked
  • 1 cup sour cream

Description

Make meal planning simpler with this easy-to-prepare recipe. These Mexican rice and bean wraps are quick to cook and packed with flavour.

Method

Step 1 of 2

In a large frying pan, combine rice, beans and corn. Cook, stirring to break up rice, for 5 minutes or until rice is heated through.

Step 2 of 2

Place 1 wrap on a board. Top with one-quarter of the rice mixture, one-quarter of the avocado, coriander and 1/4 cup sour cream. Fold in sides, then wrap to enclose filling. Repeat with remaining wraps and fillings. Cut each wrap in half. Serve.
