Method
Step 1 of 4
Cook rice according to packet instructions.
Step 2 of 4
Heat oil in a large frying pan over medium heat. Cook schnitzels for 6 minutes each side or until golden and cooked through. Transfer to a paper towel-lined plate to drain. Slice schnitzel thinly.
Step 3 of 4
Meanwhile, combine coleslaw and half of the mayonnaise in a large bowl. Season with pepper.
Step 4 of 4
Add rice to coleslaw mixture and toss to combine. Divide rice mixture among bowls. Top with schnitzel and drizzle with remaining mayonnaise. Serve.
