  • 600milliliter thickened cream
  • 3 cups milk
  • 1teaspoons vanilla essence

Method

Step 1 of 5

Turn the oven on to 180°C.

Step 2 of 5

To make caramel: In a large cake pan over medium heat, bring to simmer sugar and water, stirring every so often until sugar is dissolved. Increase heat to medium-high until caramel is deeply golden. Turn off heat.

To make custard: Stir cream and milk in a saucepan over low heat until lukewarm. Leave it cool down. Use a stand mixer to beat eggs and sugar. Pour cream and milk mixture to eggs and sugar mixture. Add vanilla essence. Whisk them gently to mix altogether. Pour the above mixture into the round cake pan.

Step 4 of 5

Place the cake pan into the large baking dish for bain marie or hot water bath by pouring hot boiled water into the baking dish with care. The water should come about halfway up the side of the cake pan. Bake in the oven for 30 minutes until custard is set.

Step 5 of 5

Cool it completely. To transfer it to the big plate, run a knife around the edge of the cake pan. With care, gently upturn onto the big plate.
