  • 500grams pitted dates
  • 125grams coarse semolina
  • 250grams butter
  • 250 sugar
  • 4 eggs
  • 1/4teaspoons bi carb soda
  • 2 tea bags (in one cup boiling hot water)
  • 2teaspoons almond essense
  • 150grams cashew and walnuts mixed
  • 2teaspoons coffee powder, with a bit of hot water for frosting
  • 50grams butter (for frosting)
  • 100grams icing sugar (for frosting)
  • 50grams self raising flour

Method

Step 1 of 4

Chop the dates and add the hot tea mixture on it and add the baking soda. Let this rest for 2 hours, so the dates get very soft and mash them a bit afterwards.

Step 2 of 4

Beat the sugar and butter till creamy, then add one egg at a time. add the almond essence at this stage.

Step 3 of 4

Add the semolina, self raising flour, mashed dates and chopped nuts, fold them well and bake for 40 minutes at 180°C.

Step 4 of 4

When the cake cools completely, beat together the frosting ingredients and pour over the cake. garnish with walnuts..
