- 1tablespoons extra virgin olive oil
- 1 brown onion, finely chopped
- 840grams no added salt black beans, rinsed, drained
- 35grams taco seasoning mix
- 375grams medium chunky salsa
- 200grams original salted corn chips
- 1 cup shredded tasty cheese
- 1/4 iceberg lettuce, finely shredded
- 2 tomatoes, finely chopped
- 2tablespoons coriander sprigs (to serve)
- sour cream (to serve)
Description
Learn how to make easy meat-free nachos in only 30 minutes. They’re also budget friendly and perfect for weeknight dinners.

Step 1 of 3
Preheat oven 220°C/200°C fan-forced.
Step 2 of 3
Heat oil in a large frying pan over medium-high heat, then cook onion, stirring, for 4 minutes or until softened. Add beans, seasoning, salsa and 2/3 cup cold water and bring to the boil. Reduce heat to medium and simmer, uncovered, for 5 minutes or until heated through and slightly thickened.
Step 3 of 3
Arrange chips on a large shallow baking tray. Spoon bean mixture over chips, then scatter over cheese and bake for 10 minutes or until cheese is golden and has melted. Top with lettuce, tomato and coriander. Serve with sour cream.
