Description

Whip up these 'Tom Collins' mocktails that feature gorgeous cucumber ribbons wrapped around the inside of the glasses, and passionfruit pulp spooned on top.

Variation:
For an alcoholic version, add 60ml gin to cucumber mixture.

Method

Step 1 of 2

Peel half of the cucumber into ribbons. Roughly chop remaining half. Place chopped cucumber and lemon juice in a blender and blitz until smooth. Transfer to a jug and stir in sparkling mineral water.

Step 2 of 2

Arrange cucumber ribbons around the inside of 2 tall drinking glasses. Divide 2 cups crushed ice between glasses, then pour over cucumber mixture. Spoon pulp of 1 passionfruit into each glass. Serve immediately.
