- 4 yellow peaches
- 100grams white chocolate
- 1/3 cup Macro organic coconut cream
- 1 cup chilled coconut water
- 2tablespoons caster sugar

Method
Step 1 of 3
Scoop pulp from 4 passionfruit into a sieve over a bowl and strain. Discard seeds. Place strained juice in a blender with peaches, coconut water and sugar and purée until smooth. Transfer mixture to an 18x28cm pan, cover with plastic wrap and freeze for 2-3 hours or until just frozen.

Meanwhile, combine chocolate, cream and vanilla in a small saucepan over low heat. Stir until smooth. Transfer to a bowl and cool slightly. Refrigerate for 30 minutes.
Step 3 of 3
Using a fork, break up frozen purée. Add to glasses with a peach slice, top with chocolate mixture and spoon over pulp from reserved passionfruit.
