Raspberry & Lime Sparkling

- 1 1/2 cup white sugar
- 500grams raspberries (frozen or fresh)
- 1/4 cup fresh lime juice
- sparkling water, chilled
Method
Step 1 of 4
Blend raspberries until smooth. Place in a saucepan over medium heat and add juice, sugar and water.
Step 2 of 4
Bring to boil then reduce heat and simmer for 10 minutes, until syrupy. Set aside to cool. Strain syrup and refrigerate overnight.
Step 3 of 4
To serve, pour 1 tablespoon of the syrup into each champagne glass.
Step 4 of 4
Top with chilled sparkling water.
