- 900grams potatoes, peeled and quartered
- 1tablespoons plain flour

Method
Step 1 of 3
Preheat the oven to 220°C (Gas 7). Put the potatoes in a pan of salted water, bring to the boil, then cook over a medium heat for 10-15 minutes, or until the potatoes are nearly cooked. Drain well, then return to the pan.
Step 2 of 3
Put the lid back on the pan and sit it on the unlit hob for 5 minutes for the potatoes to dry out. Add the flour, put the lid on, and shake the pan up and down a few times.
Step 3 of 3
Put the oil in a large roasting tin and pop it in the oven until really hot. Remove from the oven and carefully add the potatoes one by one, turning each potato in the hot oil. Season with sea salt and return to the oven to roast for 30-40 minutes, or until the potatoes are golden and crispy. Turn them halfway through cooking.
